Soup Italiano

1 red bell pepper coarsely diced
1 zucchini thickly sliced, & quartered
1 med onion - coarsely diced
1 clove garlic - chopped

saute above in olive oil - just a little (tender-crisp) in the soup pot.

add 1 C water
2 cans chicken broth
2 C cubed chicken
1 t. Italian seasoning

bring to boil, add your pasta

When pasta is done, serve. Top w/ freshly grated Parmesan cheese
